Okay, we got alot of freakin' peaches, we still have about 15lbs of peaches left. There is still alot to cut and freeze. We've got a full schedule this week and we leave for Las Vegas on Saturday. I'm not sure how we're going to manage this.
Tonight for dinner, I made stuffed bell peppers and stuffed tomatoes, ground beef and rice, topped with feta cheese. The bell peppers were picked from the same farm that we went to get peaches.
Over the past two days Skogafoss has been making lots of peach centered products. Sorbet, jam, and 2 different kinds of muffins. The first were good, but the second were better. She made some changes to the recipe and the 2nd batch came out better than the first, less dense, less fatty, and overall more moist.
she changed the recipe a little:
1 cup of peach juice instead and 1/4 cup oil, 1/2 tsp nutmeg, cooks for 17 minutes
