Cooking for One
The last few years Ive lived on my own, and the hardest thing I find with cooking is be bothered to do it when Im just cooking for myself. Most recipes you ever read are for 4 or 6 anyway...
Most things I tend to cook are things I can cook in one pot, on the hob. Any quick and single person recipes anyone wants to put up? I'll try think of anything I cook which is complicated enough to even merit writing down...

I like to just throw stuff on a pan with some olive oil and fresh pepper.
Mix and match the following Meat: 1 chicken or turkey breast, cut into strips or cubes 2 lean turkey sausages, chopped 2 fat handfuls of shrimp 2 lbs pork loin Veggies:Rred, orange, green or yellow bell pepper Bermuda or yellow onion Mushrooms Garlic Celery Spinach Tomato (yes, it's a fruit, I know) Carrots Broccoli Artichoke Cucumber Zucchini Boom. Dinner. Mix and match to your "flavour" preferences.

I agree it's hard to cook for one.... and recipes are for 4 usually the norm.
So I cook for 4. I eat one meal that night, and then another serving within 2-3 days. This accounts for 2 of those 4. The other 2, I label, date, and freeze. This means that when I come home and I don't feel like cooking. I have something that requires me to either just microwave or stick in the oven. This can be a simple baked pasta dish. Make the sauce with meat if you like. Make the pasta. Before it is al dente take out the pasta. (This will allow for the pasta to take in a little more liquid when it bakes and not be mushy.) Put in baking pan (I use the plastic reusable ones and try to use them 4-6 times) cover with cheese. Bake until cheese is melted or golden brown your choice. For freezing, you can put the cheese and cover with saran wrap and then foil. When reheating remove saran wrap and foil.

During times when hubby was away for long periods, I often ate:
- quesadillas (which have lots of possibilities) - sandwiches with different fillings - fruit salad and some cheese or a boiled egg - pasta with jarred sauce (I always add extra spices and veggies to my sauce, and you can save the rest for later in the week or use it for a homemade pizza) - 1/2 of whatever the recipe called for (4 chicken breasts? Just use 2 and eat the other for lunch the next day) - pasta salad with tuna for protein I love to make lasagna but couldn't eat an entire pan myself, even with leftovers...so on those nights I'd call my friends up for dinner and share. I'm not really much of a cook so I don't have any recipes to actually share...but maybe some of my ideas will be helpful.

Cyn has it right... make it for four and freeze it. You now have lunches and dinners for later in the week.
one of my favourite is a simple pasta dish... Get some pasta into some boiling water. While it is cooking, sweat some onions and garlic and red chilies in a frying pan (don't brown them). Add some cherry tomatoes and cook them until they soften. Add some cream and stir it all together. Add some cooked prawns (or cooked chicken pieces, if you wish) Take the pasta out of the water just before it reaches al dente and add it to the pan. Stir for a little bit (a miniute or two). Serve immediately. Dead simple.

I usually try to cook something sunday or monday night and then eat it for the rest of the week... sucks for variety but is easier then cooking every night.
also the little size george foreman grill and frozen chicken breasts are great!

Here's my single man's diet haha. Eggs, lightly salted almonds, apples, cherry tomatoes, baby carrots, canned chicken/fish and beer. All organic. Is that made of awesome or what?

Fish, shrimp, or chicken usually grilled in a light olive oil with what ever spices I find handy. Throw in some peppers (red, green whatever looks good at the market) when the meat is really close to being done. I then throw that on top of a salad. Romaine, mushrooms, cukes, tomatoes, green onions and more peppers. Top that with a basil-pesto dressing and a little fresh parmasan cheese.
(Cook the fish and shrimp hot and quick. Cook the chicken slower on less heat) I probably have that 4-5 nights a week. The other two I eat out or order in. Mornings I usually do granola mixed with yogurt and or fruit. And too much coffee. Once a week, Sat or Sun, I have breakfast out at a hotel near me. Then it's eggs, tortillas, spiced up potatoes etc... Basic Mexican style buffet. They do watermelon juice, you can watch them juicing it. It's damn good.
