With all the beautiful Spring flowers in bloom, I tried something I've always wanted to do: candied violets! They came out so nice, I had to try it with the lilacs; their intoxicating aroma begged to eaten!
They came out beautifully, and the lilacs were amazing!!! Total aphrodesiac!!

First purchase superfine sugar, or pulse granulated sugar a few times in a spice grinder (a clean coffee grinder does the trick), then very lightly froth an egg white with a fork. Using a small tipped, soft paintbrush, lightly brush each petal with egg white. I found that brushing some on a small plate and then placing the flower face down on the plate and then painting the back of the blossom was the easiest way to acomplish coating the entire flower.
Next, gently place the flower in a small dish of extra fine sugar and coat completely. Allow the flowers to dry for a few hours before using them as a garnish, or just eating them off the plate!!

I make my own Vanilla sugar, (I keep my pod after I scrape the beans out and put them in a container with sugar)
What about coloring the sugar?

Theoretically you could use this technique on on colored sugar also.

Spread sugar on Wax paper
put a drop of food color, and mix
Let dry
store in container.

It would be possible to get some colorful flowers (hmm started with color, moved to white, now back to color?) Maybe I am over complicating this. but the flowers look great.

edmos1- they do seem to take on a whitish frost according to the thickness of the coating. The food coloring is an interesting thought. They would come out super-bright, even cartoonish which could be a whole different look. It would be really neat to try that. maybe even to use completely random colors.

i would use either style depending on the event...
