Easiest Peanut butter cookies EVER
I came across this recipe some time ago and not only is it super easy, but the cookies are DELICIOUS.
You will need: 1 c. Peanut butter 1 c. Sugar 1 Egg Preheat oven to 375. Mix ingredients together. On a well greased cookie sheet ( I use oil and flour... seems to be the best way for the cookies not to stick), place spoonfuls of cookie dough. Make lines with forks. Bake for 7-10 minutes, depending on your oven. Makes around a dozen, depending on how big your spoonfuls are. |

How's that work with no flou or anything to bulk it out? Won't it just melt?

I've searched high and low for a good peanut butter cookie recipe - I use Betty Crocker mix because I have yet to find a good homemade version. I'll give this a try.

I am going to make these tonight...I shall post the results later!
Update: I made them and son loved them. They were a tad gritty, but they had a fantastic peanut butter flavor, which is lacking in the majority of the recipes I've tried. Peanut butter cookies are my favorite...I'd have to say this recipe is a keeper!

I use a very similar recipe but it is as follows:
1 c. Peanut Butter(crunchy or smooth to your preference) 3/4 c. Sugar 1 tsp. Vanilla 1 Egg Cook at your standard 350F oven for about 10-12 minutes or so. I wonder if this one may come out as a little less gritty. |

Hmmm...I'll try a little less sugar next time. I only got one cookie...they were all gone this morning when I woke up (I think someone may have had the mary jane munchies last night)

When you pull them out of the oven they should still be somewhat soft but easy enough to remove without having them fall apart completely. If you do it this way you will have a nice soft cookie, not too chewy but definitely well cooked. That was why in the recipe I posted I had the longer cooking time, I honestly think that my oven temps could be a little off though. It can be hard to judge with this recipe just the right amount of firmness, they won't be crisp when you pull them out.

thats the recipe I learned Home Ec in middle school. I showed it to my mom and I think she is still using it almost 20 years later.
