the Indian Food Thread

ok, i have a few recipes, i'll start off with one of my favorites, you post some, and i'll post some more.

it's not vegetarian friendly, i assume you can make it with tofu, if you dried the tofu a bit, but i haven't tried it that way, so i'm not sure it would work. it should though.

this is:

pork and honey - shikar korma

cut up some lean boneless porkchops into cubes.

grind up 4 cardamom pods, 3/4 inch stick of cinnamon, and mix with 1 tsp mace, 1 tsp turmeric, and 1 tsp black pepper. mix in 1 Tbs mixed orange and lemon zest.

chop up 3 small onions and 2 cloves garlic.

mix up 7 ounces yogurt with 1 tsp flour.

heat up a pan and warm up 2 Tbs honey, until honey is thin, don't burn it.

add some vegetable oil and heat it up, stir in pork, coat, and cook until browned all over.

add 7 ounces of water and salt to taste, simmer until pork is tender, then turn up the heat until all the liquid evaporates.

add garlic and onion and spices, cook a few minutes, stir in yogurt, heat up, then cover and remove from heat. let it sit about 25 minutes so the flavors all mix in together.

eat it with rice or bread or however you want to.

I haven't made a lot of Indian Food. I've made a few Thai Curries, but only one or two Indian Curries. That said, I've eaten a lot of Indian Food. It is probably my favourite cuisine (not that a whole nation can be summed up as one Cuisine... there are vast differences in styles and flavours from the North to the South and all points in between).

My favourite style is Kashmiri. It uses a lot of dried fruits and yoghurt in their dishes.

I will have to dig up some recipes that I've been meaning to make...
